ST. PETE BEACH -- We’re rolling out the sweets after Don Cesar Resort at Loews Hotel gave us a lesson in pastry prep.
Pastry chef Tara Bishop prepared this to-die-for recipe for Chocolate Banana Bread Pudding.
What You’ll Need:
- 1½ cups half-and-half
- 4 oz. Vahlrona chocolate bar
- ⅛ cup butter
- 2 whole eggs and 1 egg yolk
- ⅓ cup brown sugar
- 1 lb. banana bread cut into cubes
- 12 Vahlrona chocolate coins
Let’s Bake!
Combine the sugar and eggs in a bowl and whip until smooth. Bring the half-and-half to a boil.
Place the chocolate and butter in a bowl and add in the hot half-and-half. Mix until smooth.
Add the chocolate mixture to the egg mixture and fold in. Let cool and reserve.
Cut the banana bread into small cubes and fold into the mixture.
Fill four, 3-inch ring molds halfway with this mixture. Place thre chocolate coins in the center, and fill to the top with additional mixture.
Bake at 350 degrees for 12 minutes.
Serve with ice cream -- vanilla or espresso flavored -- and garnish with raspberries and mint.
