Floyd is whipping up a tasty concoction of ground beef rice cakes. It just takes a few minutes in the oven and you will have a great meal.
In a mixing bowl, start with 1 lb. of the leanest ground beef you can get.
To that, add two cups of cooked rice. You could use brown rice, but any style is fine. Also add:
½ tsp. seasoning salt
¼ c. parmesan cheese
¼ c. of bread crumbs
¼ c. of fresh chopped parsley
Take one medium size onion, dice it fine and sauté it in a touch of olive oil. Turn off the heat and add three cloves of garlic. Put the rice and beef mixture and just toss it around in the hot pan and mix it all together well.
Now, form them into nice round cakes. You will get about eight of them, so this is easily enough for four people.
Now, put them on a sheet tray that has been lightly oiled. Also add green and yellow pepper cut into nice squares, drizzled with a pinch of olive oil and some seasoning salt.
Pop the cakes under a broiler -- just about four inches from the broiler and let them cook for about eight minutes.
When that time is up, put them back in the oven and turn it to 400 degrees and give them another eight minutes.
Floyd recommends that for a dinner for four, you can heat up a quart of your favorite tomato sauce with some basil and chopped onion in there.
Then, for service it's quite simple.
Take two of those rice and beef cakes and set them into the tomato sauce and scatter some of those wonderful green and yellow peppers around and that's going to set a wonderful plate for you. It's going to be attractive and it's pretty much going to be tasty too.
