The Food Guy is making homemade broccoli soup. The ingredients are all quite common, many of which you may already have on hand, making it very easy to prepare in a moment's notice and quite economical, too.
Start with a whole bunch of fresh broccoli that is about two or three stems and weighs about 1.5 pounds.
Put about two tablespoons of oil in a soup pot. Carve that broccoli right into the pot.
When the broccoli reaches that beautiful emerald green color, that's when you add a half-cup of Uncle Ben's Converted Rice. This will eventually become the thickening agent that will give body to the soup.
Stir it around and then add a 49-ounce can of chicken broth.
Bring this to a boil and then lower it to a simmer and cook it for about 25 to 30 minutes until the broccoli is toothsome, or firm to the bite.
Strain the liquids from the solids. Place those solids in a food processor. Add about a cup of that stock that you just strained off, put the top on the food processor and blend it up until it is really smooth.
Then, just blend those solids into the liquids in that same soup pot on the stove.
At this point, Floyd suggests you try the soup to be sure it doesn't need more salt or pepper, but it should be fine.
All that is left to do is to ladle it into a bowl, making sure it is steaming hot. When you serve it up, try a little grated cheddar cheese.
