Floyd is making a smaller version of an old favorite in this week's Floyd the Food Guy.
He said the mini BLT will also make a great snack before dinner.
Start with a half-pound slab of raw bacon. Slice it against the direction of the slices. That makes it easier to work with when it is cooked. When the bacon is perfectly crisp, take it out of the pan, drain it on a paper towel and let it cool.
Next, make some toast, trim the crust, and then simply cut the toast into quarters.
Just before it is time to serve, drop about a cut of finely shredded romaine or red leaf lettuce into a mixing bowl, slide in that half-pound of cooked bacon and bind it together with about two or three tablespoons of mayonnais.
Using the tip of a teaspoon, just mound some of that bacon and lettuce mix right on that toast, top it with a cherry tomato and serve it up.
