In today’s Food Guy, Floyd's mixing a little bit of chicken, some veggies and a couple of different fruits to make an interesting salad.
Take a cooked chicken -- a rotisserie chicken from the store would be perfect -- and take the meat from the bones and remove the skin.
Chop up the chicken and put in a bowl.
To that, add a little more than 1/4 cup of chopped celery hearts. Also, a half cup of red grapes, seedless, cut in half and, finally, some nut meats. You may want to try 1/4 cup of filberts or hazelnuts. You could also use pecans or you could use walnuts. It’s your choice.
Then, adds some mayonnaise and a spritz of lemon juice to bring out all of those flavors.
Now, blend all of those ingredients together.
One of the best compliments to chicken salad, or even tuna salad, is fresh melon, such as muskmelon, cantaloupe and honey dew. Cut them into wonderful crescents and place the chicken salad right in the center. Understand, the nut meats are going to give the salad a great texture and the grapes’ texture and flavor will jump right out.
Add some parsley a couple of Nasturtiums and even a Johnny Jump Up, which is also an edible flower. It really completes and compliments this presentation.
