One secret ingredient can make a magic meatloaf.
Start with about three pounds of good quality ground beef. To that, add a small onion that has been peeled, diced and sautéed in a small amount of olive oil, until they were soft. They might even take on a little color.
To that, add 3 eggs that have been whipped up, as sort of a binding agent, if you will.
Now, the spice and flavor lineup: Add 1/2 teaspoon each freshly grated black pepper , 1/2 teaspoon and garlic powder, 1 teaspoon of season salt and 3 tablespoons of grated, parmesan cheese.
Now for the secret ingredient that makes it magic: 1 cup of crushed bacon crackers. Drop them right in there, and just mix it all together.
Once those ingredients are well combined, get yourself a sheet tray, and spray it with a little bit of spray oil. Drop that meatloaf miture right on thereand basically shape it into a loaf.
The next step is to start with 1/2 cup of those bacon cracker crumbs, and literally lift up the meatloaf and drop it right into the crumbs. Roll it on all sides, until the loaf is very well coated with the crackers.
I like to dress up my meatloaf before I pop it into the oven, so using a squirt bottle of ketchup, I suggest making a design on the top of the meatloaf.
Bake at 375 degrees for about an hour.
When I serve a meatloaf like this, I like to carve it at the table, just like I would a turkey or a roast of beef or pork, and there it is: Magic Meatloaf.
