This crazy corn salad is loaded with colors, and perfect for entertaining.
Start with five ears of fresh corn. You can boil it or grill it. I like the flavors you get when the corn is grilled.
Slice those kernels right off the ear, into a big bowl. Take a cup of grape or cherry tomatoes, which you have quartered, and drop them into the bowl. You also need the juice of half of a lemon.
Then add 1/4 cup of red diced onion, and about 1 tablespoon of cilantro.
You will also need 1/4 cup of blue cheese crumbles. Add a whole avocado that is cut into editable-size pieces.
Drop in a 1/4 cup of olive oil and a crushed clove of fresh garlic. Carefully mix your ingredients together very well.
I like to serve it on a base of radicchio. This is a great salad to serve with some grilled meat or fish. Always garnish it up with a tomato on the side and a little extra cilantro.
