This week, Floyd is making a baked vegetable casserole.
If you are looking for something that goes well with steak, he says this might be just what you are looking for.
Start with a lightly greased 8x8 baking dish with about 3 cups of homemade croutons. You could use the box variety if you would like, too.
Pour a 15-ounce can of diced tomatoes all over the croutons. The tomatoes Floyd uses are flavored with roasted garlic or onion to give you some nice flavor.
On top of that, scatter one cup of grated mozzarella or provolone cheese. Next saute one small diced onion in the saute pan that you had the croutons in. Season that with a teaspoon of dried oregano. When the onions are just about transparent, add about four or five small zucchini squash, which you have sliced.
If you can get some summer squash, slice them up and put them in there, as well. Just cook it up and after a couple of minutes of cooking time, pour in a 4-ounce can of tomato juice (any kind of a tomato juice product is going to work really well.)
Stir it all together and then simply pour it right over the top of the other ingredients in your casserole dish.
Then pop it right into a 350 degree oven and cook it for 45 minutes. This vegetable bake is really delicious with steak.
