To make some meatballs, start with about 1 pound of good quality ground beef, and 1/2 pound of ground pork. If you do not have ground pork in your supermarket, use a 1 1/2 pounds of the ground beef.
Also add the following:
- 1/2 cup of flavored bread crumbs with roasted garlic and parmesan
- 1/2 cup of parmesan cheese
- 1 egg yolk
- About 2 tablespoons of freshly chopped parsley
- 1 tablespoon of ketchup -- just a nice little flavor hit
- 1/2 teaspoon of season salt
Last, but not least, throw in a small onion that has been peeled, diced very fine and sautéed, barely caramelized, in about 1 tablespoon of olive oil. Mix it all together well.
Using a small ice cream scoop, portion up the meat mixture. If you do not have a small ice cream scoop, you could use a tablespoon as a rough measure.
Once you have that taken care of, wet your hands down with a little bit of cold water, and then just roll the meatballs, and drop them onto a tray that has been lightly oiled.
Bake them in a 350 degree oven for 20 minutes.
When they are done, the meatballs are fine if you just slide them into a spaghetti sauce.
They are also fun in a vegetable soup, or heat them up in a mushroom sauce, and serve them as a canapé before dinner. These meatballs are a winner.
