Floyd cracks open another bottle of wine in today’s Floyd the Food Guy. Instead of drinking it, he is using it to poach some pears.
Well hello food fans. Welcome to my kitchen. Today in food news, we’ll prepare red wine poached pears.
In a sauce pot, start with about a cup and a half of red wine. I am using merlot. Now add a half cup of cranberry juice and sweeten it up with a one-third cup of granulated sugar.
Add a cinnamon stick and a bay leaf to punch up the flavor. Stir it all together, turn up the flame, and bring that mix to a boil.
Meanwhile, peel a couple of basque pears. Cut them into editable size pieces, which will allow them to cook quicker.
Now, drop those pear pieces right into the red wine mix. You are going to bring it back to a boil, then lower the heat and let it simmer for about 10 to 12 minutes.
Remove the pears from the mix.
Now turn the mixture back up to a boil and reduce it by half. That will take 15 to 20 minutes. At that point the sauce will get thick and you will see that it moves around kind of slowly on the spoon.
Turn off the burner completely. Add the pears back into the sauce, coating completely. Leave the pears in the pot.
When it is time to serve, remove the cinnamon stick and bay leaf.
Spoon some of the pears into a bowl with some of the sauce. I like to add a small scoop of chocolate whipped cream on the side. You could also use vanilla or chocolate chip ice cream.
