Color and texture -- it is not something you normally think of while you're cooking, but Floyd does.
In this edition of Floyd the Food Guy, Floyd explains how to add some color and a lot of flavor to brussel sprouts.
Start with about a 1.5 pounds of fresh Brussel spouts. Pull off the area with the leaves until it's just a perfect globe. Then, cut them into quarters.
You are also going to need about 1.5 cups of baby carrots. Cut those into quarters as well.
Drop those carrots into a pot first. Then cover the carrots with the Brussel sprouts.
Add a pinch of salt to the pot and then barely cover them with water.
Floyd says he always keeps a teapot off to the side, so he has hot water all the time.
Cover the pot and bring it to a boil.
Check them in about 10 to 12 minutes. They should be tender enough at that point, so if they are, you can drain the water from the pot.
Now the fun part -- adding the flavor.
Start with a tablespoon of butter. Also add a tablespoon of olive oil and a teaspoon of balsamic vinegar. Last, but not least, add a good heaping tablespoon full of fresh dill.
Mix it all up and then cover the pan so it can sit in the steam and soak in all the flavors for a couple of minutes.
